First, thaw the puff pastry and spinach leaves. Squeeze the water out of the spinach leaves. Preheat the oven to 200°C. Peel and finely chop the onion and garlic clove. Add the olive oil, diced onion, and diced garlic to the spinach and mix together. Season with pepper, salt, chili, and cayenne pepper. Unwrap the puff pastry and spread the tomato paste in the center. Finely chop the olives and spread them over the tomato paste, then pour the spinach mixture over the top. Cut the feta cheese into pieces and arrange them over the spinach, then season with pepper and salt again. Now brush one side of the puff pastry with water or egg yolk. First, place the other side on top and then place the coated side over the top to ensure it sticks – press the short sides down with a fork if necessary. Brush the top lightly with water or egg yolk and sprinkle with sesame seeds. Place in the preheated oven and bake for about 20–25 minutes. Fresh salad is delicious with this dish. Tip: It’s also great to add or change with various other ingredients, such as tomatoes, mushrooms, Gorgonzola, or gratin cheese.
