Savory muffins with olives

Ingredients for 12 servings:

  • 250 g wheat flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • some salt
  • 2 eggs
  • 75 ml olive oil
  • 150 ml milk
  • 1 tbsp oregano
  • 125 g sheep’s cheese
  • 12 black olives, pitted

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

…and sheep’s cheese or Gouda…

Finely dice the feta cheese and quarter the olives. Mix the flour with the baking powder, baking soda, and salt. Add the eggs, oil, and milk and mix into a smooth batter. Finally, fold in the oregano, feta cheese, and olives. Bake at 160°C (320°F) for about 25 minutes. Variation: Cut 125g of Gouda into cubes and fold in. Season the batter with salt and pepper. Sprinkle the muffins with about 75g of grated Gouda before baking.
