Savory wholegrain muesli bars

Ingredients for 1 servings:

  • 50 g wholemeal flour
  • 50 g oat flakes, fine
  • 50 g sesame seeds
  • 50 g ground almonds
  • 50 g flaxseed
  • 50 g seeds (sunflower, pine and pumpkin seeds)
  • 50 g walnuts, chopped
  • 50 g almonds, chopped
  • 50 g tomatoes, dried, chopped
  • 50 g low-fat curd cheese
  • 135 g feta cheese, diced
  • 1 packet of baking powder
  • 2 eggs
  • 1 vegetable onion(s)
  • 200 g lean, smoked, diced ham
  • 15 ml oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Dice the onion and fry in a little oil until lightly browned. Add the ham and let it cool. Combine the dry ingredients in a bowl and mix. Then add the feta and the onion-ham mixture, then knead everything together with the eggs and quark into a dough. It should form a slightly sticky, malleable dough. If it’s still too dry, add a little more quark. Preheat the oven to 180°C with fan. Form 50g of the mixture into bars. This makes about 20 bars. I shaped them so that they fit in the toaster so I can thaw them after freezing. Place the bars on a baking sheet lined with baking paper and bake for 15-20 minutes. Let the baked goods cool. I came up with this wholesome breakfast that I can easily take with me. The plan is to freeze two bars at a time and then defrost them in the toaster in the morning (we’re still testing). One bar has about 165 kcal.
