quick snack when you’re short on time

Heat plenty of clarified butter in a pan over medium heat. Add the frozen or freshly breaded schnitzel to the pan, basting it with the hot fat repeatedly and frying on each side until crispy and golden brown. Don’t set the heat too high, or it will be too dark on the outside and still frozen in the middle, or undercooked! In the meantime, cut open the baguette roll. Spread the bottom half with mayonnaise, then arrange the cucumber slices and lettuce leaves on top. Pour the ketchup into a small bowl. Stir in the granulated stock, a little water, curry powder, and a pinch of salt and pepper, and heat briefly in the microwave. Stir again and season to taste. Drain the schnitzel on kitchen paper and place it on the baguette roll. Garnish with the onions and, if desired, tomato slices, and spread the warm spicy ketchup on top. Place the roll lid on top.
