Schnitzel under the cheese – apple crust à la Dieter

Ingredients for 4 servings:

  • 4 veal escalopes or pork escalopes
  • 1 tbsp clarified butter
  • salt and pepper, pepper
  • 50 g butter
  • 40 g breadcrumbs (Weckmehl)
  • 60 g mountain cheese, grated
  • ½ apple, not too sweet, finely diced
  • 1 tbsp parsley, finely chopped
  • 1 tbsp chives, in rolls
  • 1 dashes Worcestershire sauce

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Veal or pork schnitzel

For the crust, cream the butter until fluffy. Gradually stir in the breadcrumbs, mountain cheese, apple pieces, Worcestershire sauce, parsley, and chives. Season with salt and pepper. Season the schnitzel with salt and pepper and lightly brown on both sides in the clarified butter. Cover each schnitzel well with the crust mixture and bake for about 5 minutes in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit). Serve with mashed potatoes, peas/carrots tossed in butter, or green beans.
