Schnitzel with paprika and pearl onion sauce à la Gabi

Ingredients for 2 servings:

  • 2 pork schnitzels from the topside
  • Salt and pepper, black, from the mill
  • some flour
  • 1 medium egg(s), beaten
  • some breadcrumbs
  • 1 tbsp clarified butter
  • 125 ml water, hot
  • 1 small jar of paprika, drained
  • 1 small jar of shallots, drained
  • ½ tbsp peppercorns, green (jar), drained
  • 1 tsp cornstarch, or more
  • some cold water to mix

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Season the schnitzel on both sides with salt and pepper. Place the flour, egg, and breadcrumbs on three shallow plates. Coat the schnitzel first in flour, then in the egg, and then in the breadcrumbs. Heat the clarified butter in a large non-stick frying pan. Fry the schnitzel over medium heat for 5 minutes on each side until golden brown, remove from the pan and keep warm. Deglaze the pan with water. Add the paprika, pearl onions, and peppercorns, bring to a boil, and gradually thicken with the cornstarch until the desired consistency is reached. Season to taste with salt and pepper, pour over the schnitzel, and serve. Serve with homemade fries.
