Scrambled eggs with sausages and spring onions

Ingredients for 2 servings:

  • 6 eggs
  • 4 sausages, fresh
  • 1 bunch of spring onions
  • 250 g Gouda or other cheese to taste
  • 2 tbsp cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Cut the sausages into thin slices and fry in a pan. Slice the spring onions and briefly fry the white parts with the sausages. Whisk the eggs in a bowl. Cut the cheese into small cubes and add it to the eggs along with the green part of the spring onions. Pour in the cream and season with salt and pepper. Mix everything together. Add the fried sausages and onions to the bowl with the eggs. Return everything to the pan and stir-fry until the eggs are set and the cheese is stringy. Serve with toast.
