Scrambled Tofu

Ingredients for 4 servings:

  • 150 g smoked tofu
  • 1 onion(s)
  • 400g tofu
  • 1 dash of soy sauce
  • some turmeric
  • salt and pepper
  • e.g. soy milk (soy drink) or silken tofu
  • oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Scrambled eggs – substitute, very tasty

Dice the onion and smoked tofu and fry in a hot pan with a little vegetable oil. When the onions are translucent, add a dash of soy sauce. Mash the plain tofu with a fork and fry in the pan for about 4 minutes (longer if you like) to allow the roasted flavors to develop. Add the turmeric and season with plenty of salt and a little pepper. If you prefer your scrambled eggs a little more moist, add some silken tofu or soy milk. I missed scrambled eggs so much that I ate scrambled tofu for a week.
