Cashew cream with fruit puree

Ingredients for 2 servings:

  • 200 g cashew nuts
  • 200 g of fruits (strawberries, raspberries etc.) frozen is also possible
  • ½ vanilla pod(s)
  • e.g. agave syrup, honey or maple syrup

Working time approx. 10 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 10 minutes

A healthy fruity dessert

Soak the cashews in cold water overnight and drain before processing. Strain the fruit and, if necessary, pass it through a sieve. Puree the cashews in a blender (an immersion blender also works). Add about 2 tablespoons of the fruit puree and the vanilla pulp, and sweeten to taste. Sweeten the fruit puree (again to taste). Serve the puree in a glass and pour the fruit puree over it. Decorate with fruit, if desired.
