Seitan – My First Homemade Product

The perfect seitan – my first homemade product recipe with a picture and simple step-by-step instructions.

  • 250 g Wheat gluten
  • 0,5 packet Dry yeast
  • 1 tsp Salt or herb salt
  • 2 tsp Sweet paprika
  • 2 Pinches Cinammon
  • 0,5 tsp Black pepper
  • 0,25 tsp Pepper White
  • 1 tsp Vegetable stock powder organic
  • 200 ml Cold water
  • 3 tbsp Tomato paste
  • 1 tbsp Soy sauce
  • 2 tbsp Olive oil
  • 1 tbsp Vegan Worcestershire sauce
  • 3 Toes Fresh garlic
  • 1 small Piece of ginger approx. 2 cm
  1. Finely chop garlic and ginger in a smaller bowl and put approx. 500 ml. (Thermomix: Pour into the Thermomix, 5 seconds on level 6)
  1. Put all dry ingredients in a larger bowl (add to the Thermomix for Thermomix friends.)
  1. Mix all wet ingredients from water to the garlic and ginger and with a fork and pour onto the dry ingredients. (Thermomix: Mix all wet ingredients in a measuring cup and add to the Thermomix)
  1. Knead the ingredients together for about 5 minutes, then shape a sausage and wrap it in aluminum foil like a candy. (Thermomix: 2 min on kneading level, then shape sausage and wrap in aluminum foil)
  1. Place the packet on the middle rack, bake at 180 degrees for about 60 minutes. It doubles in volume. Take out and let cool.
  1. Now you can proceed as with purchased seitan and cook with it. If you prefer other spices, there are no limits to your imagination. Keeps in the refrigerator for about 1 week. Wheat gluten is easiest to get on the internet.
