Selevi Sarmi-stuffed Sauerkraut Leaves with Minced Meat
The perfect selevi sarmi-stuffed sauerkraut leaves with minced meat recipe with a picture and simple step-by-step instructions.
for the minced meat filling
- 1 piece Onion
- 1 tbsp Sunflower oil
- 100 g Rice
- 100 ml Water
- 1 tsp Sweet paprika powder
- 500 g Mixed minced meat
- 1 tsp Ground caraway
- 1 tsp Sweet paprika powder
- Salt and pepper
for the Selevi Sarmi
- 20 piece Sauerkraut leaves
- 1200 ml Meatsoup
- 2 piece Bay leaf
- 4 piece Allspice grains
- 1 piece Chilli pepper
- 1 tbsp Sweet paprika powder
- Salt and pepper
Preparation of the minced meat filling
- Peel the onion, wash and cut into small pieces. Heat 1 tablespoon of oil in a pan and fry the onion cubes in it. Add the rice and fry briefly. Deglaze with 100 ml of water, mix in paprika powder and bring to the boil until the rice has absorbed the liquid. It takes 3-4 minutes. Put the pan aside and let the onion and rice mixture cool down.
- Put the minced meat in a bowl. Mix in the caraway seeds, paprika powder and cooled rice, season with salt and pepper. Mix everything well but do not stir, otherwise the minced meat will be tough.
Preparation of the Selevi Sarmi
- 16 Spread out pieces of sauerkraut leaves and spread the minced meat mixture on top (about 2 tbsp on each leaf). First fold the right side inwards, then the left side and roll together like a roulade.
- Cover the bottom with two to three sauerkraut leaves. (A large, oiled stew or Römertopf or a baking dish can be used for this). (I use original Bulgarian dishes). Place the sarmi on top, close to each other, this will prevent them from falling apart. Add two bay leaves, four allspice grains, 1 tbsp paprika powder and 1 piece of chilli pepper (if you don’t like spiciness without chilli pepper). Pour the meat stock so that the sarmi are covered.
- Cover the ovenproof dish and cook the sauerkraut roulades in a preheated oven at 180 degrees for about 90 minutes, until the cabbage leaves are tender.

- In Bulgaria bread is served with it, natural yoghurt mixed with a little oil, paprika powder and, if desired, with a little finely chopped garlic and Scharena Sol.
- Scharena Sol (in German “Buntes Salz”) is probably the best-known herbal salt in Bulgaria, the components of which are made up of salt, paprika powder and Tschubritza (summer savory) and the colors of which are symbolized by the Bulgarian flag: white salt; Tschubritza; red paprika powder.
- In Bulgaria, Selevi Sarmi is a traditional meal for Christmas Eve and New Year’s Eve.
