Ingredients for 3 servings:

  • ½ liter of milk
  • 2 tbsp butter or margarine
  • 1 pinch of nutmeg
  • 2 pinches of salt
  • 1 pinch(s) of pepper
  • 250 g semolina
  • 1 egg(s)
  • n. B. broth
  • possibly parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the milk, fat, and spices to a boil, set aside, and add the semolina. Stir until a very firm ball has formed (note: if the semolina mixture is still too soft, feel free to add a little more semolina). Then add the eggs (sometimes you only need one – it depends on the consistency). These must also be thoroughly mixed in. Now, with two wet spoons, scoop out dumplings and add them to the boiling broth. Once all the dumplings are in the pot, reduce the heat so the soup is no longer boiling. Let the whole thing simmer for about 15-20 minutes, garnishing with parsley if desired.
