semolina dumplings

Ingredients for 4 servings:

  • 200 g semolina
  • ½ liter of milk
  • 1 ½ tsp salt
  • 4 m.-sized eggs
  • 100 g margarine
  • some nutmeg
  • 1 liter of broth

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Depending on the size, it makes about 40 pieces

Bring the milk to a boil with margarine, salt, and nutmeg. Then add the semolina all at once to the pot and stir quickly with a whisk until a thick, firm mixture forms and a white coating forms on the bottom of the pot. Remove the pot from the heat and let the mixture cool slightly. Now stir in the eggs, one at a time. Season with salt and nutmeg. Wet your hands so the dough doesn’t stick too much and form small balls. Bring the broth to a boil and add the dumplings to the broth. Wait until the dumplings rise to the surface; this doesn’t take long. If you like, you can also add fresh, chopped herbs to the dough.
