Ingredients for 4 servings:
- 1 liter of milk
- 100 g semolina
- 90 g sugar
- 2 eggs, separated
Instructions
Working time approx. 15 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 15 minutes; Total time approx. 5 hours 30 minutes
Boil the milk with 3/4 of the sugar. Do not stir! When the milk boils, add the semolina and mix. Remove the milk from the heat and add the egg yolks. The milk should not be too hot, so the yolks do not curdle. Beat the egg whites until stiff and fold in with the remaining sugar. Refrigerate until the mixture is firm (this will take a few hours).
