Shrimp in beer batter

Ingredients for 2 servings:

  • 500 g shrimp(s), raw, peeled, deveined
  • 150 g flour
  • 150 ml beer (light pilsner)
  • 2 eggs
  • 1 tsp salt
  • 50 g butter, soft
  • pepper
  • 1 lemon(s) (organic)
  • 1 pack of vegetable fat

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Put the flour in a bowl. Add salt and pepper and mix. Once everything is well combined, pour in the beer and whisk until a tough batter forms. It’s best to separate the eggs at this point (it’s not absolutely necessary, but it makes the mixture fluffier!). Add the egg yolks to the batter and mix. Add the butter and mix again. Beat the egg whites until stiff peaks form and carefully fold in the beaten egg whites. Place the shrimp in the batter and coat them with the batter. Meanwhile, heat the oil in a deep fryer to 175°C. Fry the shrimp in batches for approx. 4-6 minutes. Remove the shrimp and drain on kitchen paper. Slice the lemons and drizzle over the shrimp to taste.
