- 700 g Floury potatoes
- 8 Pc. Garlic cloves
- 250 g Green peas canned
- 125 ml Buttermilk
- 1 tsp Tarragon spice
- 1 tbsp Rapeseed oil
- 8 Pc. Spring onions fresh
- 1 tsp Iodized sea salt
- First, peel and wash the potatoes, drain and cut into small pieces, then cook the potatoes in salted water.
- In the meantime, peel and finely chop the garlic. Peel the spring onions and cut into fine rings.
- After the potatoes are finally done, add the peas and let everything boil again for about 1 – 2 minutes. Drain the potatoes over a kitchen sieve and allow to drain.
- Put the potatoes back in the pot and add the buttermilk, tarragon and garlic, mash everything with the potato masher, mash.
- Heat the oil in the pan and steam the spring onions in it until they are glassy, please do not let them turn brown.
- Pour the translucent green onions over the mashed potatoes, distribute and carefully heat everything again over the lowest heat.
