Ingredients for 1 servings:

  • 150 g flour
  • 100 g cornstarch
  • 1 packet of baking powder
  • 175 ml buttermilk
  • 1 egg(s)
  • 150 g sugar
  • 350 g fruit of your choice and season
  • 1 tsp lemon zest

Recipe for idiots

Preheat oven to 180°C fan/convection oven. Peel or trim fruit if desired and chop into bite-sized pieces. In a bowl, whisk together egg, buttermilk, sugar, and lemon zest until smooth. Add flour, cornstarch, and baking powder. Continue whisking until all lumps are gone. Stir in the prepared fruit. Pour the batter into 16 prepared muffin tins or 16 paper baking cups. Place in the preheated oven and bake for about 25 minutes, until golden brown. This amount makes 16 muffins. A quick tip: This batter can also be baked as a sheet cake—in this case, simply pour the batter onto a baking sheet instead of into baking cups. Watch the baking time carefully!
