Basic recipe to develop yourself!

Sift flour into a bowl, add the remaining ingredients, and mix to form a smooth batter. Mix on high with a mixer for at least 2 minutes. Pour batter into a prepared muffin tin, which is either greased or lined with paper baking cups. Drop 2 tablespoons of batter into each muffin tin. Bake in a preheated oven at 180°C on the middle rack for between 15 and 30 minutes (until a nice golden brown). Then remove from the oven and let cool. Variations: Add hulled blueberries to the center of the batter before baking, or separate 1/4 of the batter and mix it with cocoa powder (bake as marble cakes), or after baking – when the muffins have cooled – cover them with chocolate glaze.
