Simple Semolina Pancakes
The perfect simple semolina pancakes recipe with a picture and simple step-by-step instructions.
- 400 g Durum wheat semolina
- 1,5 liter Milk
- 2 piece Eggs
- 1 whole Vanilla pod scraped out
- 3 tablespoon Vanilla sugar
- Rapeseed oil for the pan
- 1 piece Butter for the pan
- 1 glass Apple compote
- Powdered sugar as required
- Cut open the vanilla pod and scrape out the pulp.
- Put the milk in a saucepan, add the vanilla pulp and the vanilla sugar.
- Put the vanilla pod in a container with sugar, this will be a wonderful homemade vanilla sugar.
- Bring the milk to the boil, remove from the hob and let the semolina trickle in, stir vigorously. Put the semolina on the hob again, briefly bring to the boil again.
- Get off the hotplate and let it soak for 10 minutes. Put the pot in the sink with cold water to cool down. No water should get into the semolina.
- In the meantime, separate egg whites and yolks. Beat the egg whites into stiff snow. Mix the egg yolks with the mixer until creamy. If you like it very sweet, you can stir sugar into the egg yolk.
- When the semolina has cooled, stir in the egg yolks. Then fold in the egg whites.
- Let a pan with rapeseed oil get a little hot and bake the semolina mixture spoon by spoon.
- Preheat the oven to 150c top heat and put the semolina from the pan into a frying pan, sprinkle with plenty of powdered sugar and continue until all the semolina is used up.
- Due to the top heat in the oven and the powdered sugar, the semolina is slightly caramelized. But be careful that the semolina doesn’t burn in the oven.
