Simple sponge cake with nuts and cocoa

Ingredients for 1 servings:

  • 125 g sugar
  • 100 g flour
  • 50 g walnuts, ground
  • 6 tbsp water, cold
  • 3 eggs
  • 1 tsp baking powder
  • 1 tbsp cocoa powder
  • 3 tbsp rum

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Beat the eggs, water, and sugar for a few minutes until very foamy. Combine the flour, baking powder, and ground walnuts and stir in. Divide the dough in half. Mix the cocoa powder with the rum and pour this mixture into one of the two dough halves. Now place the batter, alternating tablespoonfuls at a time, into the center of a prepared cake tin (as with the zebra cake). Bake in a preheated oven at 160°C (convection oven) for about 15 minutes. Additional information: This is a thin sponge cake mixture. If you want a deep sponge cake, I recommend making double the mixture (the baking time will then be correspondingly longer). Use a small ladle to pour the batter into the tin instead of a spoon.
