Sivi's Franconian Schnitz – Variant

Ingredients for 4 servings:

  • 400 g potatoes
  • 300 g swede(s)
  • 300 g celeriac
  • 1 onion(s)
  • 400 g leek
  • 1 small cauliflower
  • 50 g clarified butter
  • 250 g minced meat (beef)
  • Salt and pepper, from the mill
  • 1 tbsp paprika powder, sweet
  • 1 liter meat broth, preferably home-made
  • 3 tbsp parsley, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

A hearty stew

Peel the potatoes, turnips, celery, and onion and cut everything into small cubes. Trim and wash the leek and slice it into thin rings. Cut the trimmed cauliflower into florets. Fry the onion in clarified butter until translucent, stir in the minced meat and fry until crumbly. Season with salt, pepper, and paprika. Add the potatoes, celery, leek, and turnips and fry briefly. Pour in the stock and simmer for 15 minutes. Add the cauliflower florets and cook for another 15 minutes. Season to taste and serve sprinkled with parsley. Serve with fresh farmhouse bread and a cold beer.
