Ingredients for 2 servings:
- 250 g mushrooms
- 300 g pork fillet(s)
- 20 g clarified butter
- 150 g crème fraîche
- Salt
- Pepper, white
- basil
- Lemon balm
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Clean and halve the mushrooms. Shred the fillet, brown in batches all over in the clarified butter, then remove from the pan, then season with salt and pepper. Add the mushrooms to the frying fat, sauté, and season. Add half of the crème fraîche and heat through. Return the meat to the pan and let it simmer briefly. Wash and finely chop the herbs and mix with the remaining crème fraîche, salt, and pepper, except for a tablespoon for sprinkling. Just before serving, add to the dish and garnish with the remaining herbs.
