Ingredients for 9 servings:

  • 12 tomatoes
  • 8 onions
  • 8 garlic cloves
  • 8 tbsp tomato paste
  • 8 tbsp vinegar (rose vinegar)
  • 8 tbsp sugar
  • 4 tsp mustard
  • 4 tsp smoked salt
  • 4 tbsp paprika powder, sweet
  • 1 tsp ginger powder
  • 1 tsp cumin
  • 2 tsp chili flakes
  • 4 tsp Worcestershire sauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Finely chop the onions, garlic, and tomatoes. Sauté the onions and garlic in a little oil and add the sugar until slightly caramelized. Then add the tomato paste and fry for a while to develop a light roasted flavor. Then add the chopped tomatoes and cook for a short time. Then add the rosé vinegar. Mix in the remaining ingredients and simmer gently on the stove for at least an hour. Finally, transfer everything to a blender, puree, and strain through a sieve.
