Ingredients for 4 servings:
- 1 liter of water
- 1 vegetable stock cube or 1 tsp Vegeta
- 1 large kohlrabi, or 2 smaller ones
- 1 stalk(s) leek, small
- Black pepper, freshly ground
- Chives, for sprinkling
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Heat water in a soup pot and dissolve vegetable stock cubes (at least 1 whole cube) in it. Halve the washed leek, cut into thin slices, and add to the pot. Simmer gently for about 5-10 minutes. Peel the kohlrabi, cut into thin slices, and then into small cubes (I use a food processor; it’s very easy to chop). Then add the kohlrabi cubes to the pot and simmer for about 20 minutes, until soft. Season to taste with salt and freshly ground pepper. Serve the soup sprinkled with fresh chives.
