Small goat cheese with caramelized walnuts

Ingredients for 4 servings:

  • 100 g walnuts
  • 1 tbsp oil (sunflower oil)
  • 75 g sugar
  • 4 small cheeses, goat cheese (50 g each), e.g. Crottin de Cavignol
  • 4 sprigs of lavender
  • 2 tbsp honey (chestnut honey)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

served with honey and lavender blossoms

Roughly chop the walnuts. Heat the oil and sugar together in a pan, stirring constantly, until a light brown caramel forms. Immediately add the nuts, stir well, and place everything on oiled aluminum foil (work quickly, as the hot caramel will darken quickly). Allow the nuts to cool. Serve the goat cheese with the caramelized nuts and lavender sprigs. Drizzle honey over each cheese, sprinkle with a few lavender blossoms, and eat the nuts with the cheese.
