Smoked goat cheese on tomato and olive compote

Ingredients for 2 servings:

  • 2 slice(s) cheese (from a goat cheese roll)
  • 1 small jar of green olives without stones
  • 10 cherry tomatoes
  • 30 g pine nuts
  • 1 tsp smoked salt
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the tomatoes and slice the olives. Toast the pine nuts and mix them with the olives and tomatoes. Pour into two small ovenproof dishes and place a slice of goat cheese on top of each. Sprinkle with smoked salt (about 1/2 teaspoon each). Drizzle with olive oil and bake at 220°C (425°F) for 10 minutes. This simple dish will delight even goat cheese haters.
