Smoked Pork with Apple and Leek Crust

Ingredients
 

  • 1 kg Kassel roast salmon
  • 2 Apples
  • 1 Leek
  • 5 tbsp Bread flour
  • Salt
  • Pepper
  • Oil
  • Balsamic onions:
  • Oil
  • 4 large Onions
  • 4 large Cane sugar
  • Balsamic vinegar
  • Salt

Instructions
 

  • Wash the leek thoroughly - cut in half into oblique slices, peel the apples, remove the ken casing and cut into wedges
  • Heat the oil in the pan, sauté the leeks and apples and add the breadcrumbs, sauté everything well, season with salt and pepper.
  • Wash off the kasseler - put it dry in a baking dish and distribute the apple and leek mixture on it --- press firmly.
  • Now put it in the oven preheated to 155c for about 120 minutes.
  • ******* BALSAMICO ONIONS ********* Peel the onions, cut into wedges and sauté in a pan with hot oil, sprinkle with cane sugar and let everything caramelize, deglaze with balsamic vinegar and let it simmer a little Season with salt.
  • Now take the pork roast out of the oven - let it rest for a while and then cut it into slices.
  • Place a slice on a plate, add balsamic onion and a side dish and enjoy.
  • We had potatoes with it, but mashed potatoes also taste good with it --- Bon appetit; 🙂
