Smoked pork with mustard crust

Ingredients for 6 servings:

  • 1,500 g raw, boneless smoked pork (approx. 200-250 g per person)
  • 1 small onion(s)
  • small bunch of herbs (parsley, chives, thyme), finely chopped
  • 3 tbsp mustard, medium hot
  • 2 tbsp flour
  • 1 cup crème fraîche
  • 3 tbsp cream cheese
  • 3 gherkins, finely chopped
  • 1 tbsp breadcrumbs
  • pepper
  • curry
  • Caraway powder
  • Sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cooked in a roasting bag. Ideal for preparing ahead.

Cut a cross into the smoked pork loin. Finely dice the onion and sauté lightly with the chopped herbs, then let cool. Dust with flour. Make a stuffing from the mustard, crème fraîche, cream cheese, and gherkins and season with pepper, curry powder, ground caraway, and sugar (no salt!). Mix with the onion mixture and breadcrumbs. Cover the smoked pork loin completely with this stuffing. Place in a roasting bag, ensuring there is enough air space, and tie tightly. Bake in the oven at 170-180°C for about 1 hour. Serve best with salad and baguette.
