Ingredients for 2 servings:
- 250 g celeriac
- 500 g carrot(s)
- 1 small onion(s), chopped
- ½ bunch flat-leaf parsley, chopped
- 1 bunch of chives, cut into rolls
- 3 sprigs of tarragon, chopped
- 150 g feta cheese, cut into cubes
- 1 tbsp mustard, medium hot
- 4 tbsp Balsamic vinegar, white
- 3 tbsp rapeseed oil
- 3 tbsp broth
- 1 pinch(s) of sugar
- n. B. Pepper, from the mill
- n. B. Salt

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes
as a main course or starter
Peel and slice the carrots. Cut the celery into similarly sized slices. Cook the carrot and celery slices together in salted water until tender, drain well, and add to a bowl with the onions. For the dressing, mix all ingredients well and add to the still-warm vegetables. Mix thoroughly and let cool. Then stir in the herbs and feta.
