Instructions
Working time approx. 1 hour; Cooking/baking time approx. 3 hours 20 minutes; Total time approx. 4 hours 20 minutes
For the batter, beat 3 eggs with sugar, vanilla sugar, and butter until frothy. Then add the milk, flour, and baking powder. To color the batter blue, stir in enough food coloring to reach the desired intensity. Pour the mixture into 12 muffin cases. Bake the muffins at 180°C in a preheated oven with top/bottom heat for about 30-40 minutes and let cool thoroughly. For the hats, beat 2 egg whites until stiff peaks form. Then drizzle in the lemon juice, vanilla sugar, and sugar and whisk to combine. Use a piping bag to pipe the hats onto a baking sheet lined with baking paper. I made a stencil beforehand and measured the diameter of the muffins. Let the hats dry in the oven at 80°C fan/convection oven for about 100 minutes. The low temperature will prevent them from browning. After the muffins and hats have cooled, carefully cut a hollow into the muffins with a knife to create a hole for the hats. Attach the hats with icing. To do this, mix a thick glaze from powdered sugar and lemon juice. Then, use icing and chocolate chips to sculpt the eyes, and decorate the faces with food coloring if desired.
