Soft White Chocolate Chip Cookies

Ingredients for 20 servings:

  • 250 g butter, soft
  • 130 g brown sugar
  • 130 g sugar
  • 2 tsp vanilla paste
  • 2 eggs
  • 260 g flour
  • 1 tsp baking soda
  • 1 pinch of salt
  • 100 g walnuts, chopped
  • 150 g chocolate, white, chopped

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

First, beat soft butter, brown and white sugar, and vanilla paste with a mixer or food processor for about 3 to 4 minutes until creamy. Then add the eggs one at a time and mix thoroughly. Next, combine the flour, baking soda, and salt and stir into the liquid mixture as briefly as possible. Finally, add the walnuts to the batter. Now, using an ice cream scoop or two spoons, spread the batter out onto a baking sheet lined with baking paper, leaving enough space between them, and spoon the white chocolate onto the mounds. Bake the cookies in a preheated oven at 200°C (top and bottom heat) for about 8 to 12 minutes. When the outside is golden brown, they are done. Do not leave in the oven any longer, as this will cause them to become hard and dry. Allow the cookies to cool completely before removing them from the baking paper and placing them in a container, as otherwise they will be very fragile.
