Solero dessert – enjoy ice-cold

Ingredients for 14 servings:

  • 1 large can of peach(s)
  • 250 g cream
  • 750 g Greek yogurt
  • 35 g vanilla sugar, homemade or 1 vanilla pod and some sugar
  • 500 ml passion fruit juice
  • 2 bags of vanilla sauce powder (Bourbon vanilla)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the peaches and arrange them in dessert glasses. Combine the yogurt, vanilla sugar (or vanilla bean pulp and 35g sugar) in a bowl. Whisk the cream until stiff peaks, then fold in. Spread the yogurt cream over the peaches. Combine the vanilla sauce powder and passion fruit juice in a bowl and whisk vigorously with a hand mixer for 1 minute. Top the yogurt cream with the passion fruit sauce. Refrigerate until ready to serve. The dessert can be prepared a day in advance. The passion fruit sauce stays on top and doesn’t run into the yogurt cream. I used small glasses, which are actually tealight holders. 8 glasses with a capacity of 125ml each, plus 6 glasses with a capacity of 140ml. If you use larger glasses, the number of servings will be reduced. The amount in the small glasses was perfect for us. It also only needed a little something for dessert. It’s easy to calculate if you want fewer servings but more content in the glasses. Super dessert, enjoyed straight from the fridge, a dream.
