Sorrel vinegar

Ingredients for 1 servings:

  • 4 handfuls of sorrel
  • 2 tbsp juniper berries, whole
  • 2 tbsp peppercorns
  • 1 tbsp allspice, whole grains
  • 7 bay leaves
  • 750 ml vinegar, wine vinegar light or rose

Instructions

Working time approx. 10 minutes; Rest period approx. 14 days; Total time approx. 14 days 10 minutes

for game or sauerbraten marinades

First, sort the sorrel, wash it, and dry it thoroughly. Then, lightly crush the spice grains and berries in a mortar and pestle, and tear the bay leaves a few times or even tear them into pieces. Place everything in a screw-top jar or similar and fill with the vinegar. Let it stand for at least 2 weeks (4-6 weeks is fine) to infuse – but not in the sun. Then filter and bottle. The vinegar can now be used for marinating sauerbraten or game. The sorrel helps tenderize the meat.
