Ingredients for 30 servings:

  • 10 bunches of parsley
  • 1 celeriac with greens
  • 1 bunch of carrots
  • 1 stalk(s) leek
  • Iodized salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the parsley and spin dry thoroughly. Wash the celery root, peel it thickly, and roughly chop it into pieces. Wash and peel the carrots. Wash and trim the leek thoroughly. Put all ingredients through a meat grinder or chop them in a food processor. Mix 500g of vegetable puree with 500g of salt, pour into screw-top jars, and store in the refrigerator. Tip: Ideal as a soup seasoning, but also for all kinds of stews. Use sparingly when cooking, then add more seasoning.
