- 1 bunch of soup greens, consisting of:
- 1 stalk(s) leek
- 1 carrot(s)
- 1 piece(s) celeriac
- Salt, coarse
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash and trim the soup vegetables, then cut them into very fine cubes. Dry them separately on a baking sheet in the oven for about 15 minutes at 75°C. Then carefully fill a test tube with coarse salt and the various vegetables, alternating layers. Gently press the individual layers together with a skewer, beginning and ending with salt. Seal the test tube with a cork. Inscribe a bay leaf with a gold pen and tie it to the tube. It makes a lovely souvenir.
