Sour cherry jam with limes

Ingredients for 6 servings:

  • 1 kg sour cherries
  • 1 sachet of vanilla sugar or
  • 1 vanilla pod(s), scraped pulp
  • 10 tbsp lime juice (from about 3 ripe limes)
  • 1 kg gelling sugar
  • 1 tbsp lime(s), grated zest (untreated)

Instructions

Working time approx. 1 hour; Rest time approx. 4 hours; Total time approx. 5 hours

Wash, stem, and pit the cherries. Let it steep with the vanilla sugar or vanilla bean pulp, lime juice, and gelling sugar for at least 3-4 hours. Then bring the fruit mixture to a boil while stirring and simmer for 4 minutes. Purée with a hand blender, then stir in the lime zest. Pour the mixture into the prepared jars while still hot, cover, and let stand on the lid for 5 minutes to vacuum seal.
