Ingredients for 4 servings:

  • 1 kg potatoes, boiled from the previous day or jacket potatoes
  • 1 onion(s), red, finely chopped
  • 2 tomatoes, chopped or some halved cherry tomatoes
  • 1 bell pepper(s), diced or a piece of cucumber or corn from the can
  • salt and pepper
  • 3 tbsp balsamic vinegar, lighter
  • 6 tbsp olive oil
  • 2 tbsp parsley, finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

good for using up leftovers

Cut the potatoes into small cubes and mix with all the other ingredients. Let it sit for a while and season to taste. It’s easy to prepare and tastes best the next day. It goes well with meatballs.
