Ingredients for 4 servings:
- 1 kg potatoes, boiled from the previous day or jacket potatoes
- 1 onion(s), red, finely chopped
- 2 tomatoes, chopped or some halved cherry tomatoes
- 1 bell pepper(s), diced or a piece of cucumber or corn from the can
- salt and pepper
- 3 tbsp balsamic vinegar, lighter
- 6 tbsp olive oil
- 2 tbsp parsley, finely chopped

good for using up leftovers
Cut the potatoes into small cubes and mix with all the other ingredients. Let it sit for a while and season to taste. It’s easy to prepare and tastes best the next day. It goes well with meatballs.
