Sour potatoes with bacon

Ingredients for 4 servings:

  • 800 g potatoes
  • Salt
  • 120 g bacon, diced, streaky
  • 1 onion(s), diced
  • 2 tbsp butter
  • 2 tbsp flour
  • ¾ liter meat broth
  • ⅛ liter white wine, dry
  • 2 tbsp vinegar, approx.
  • salt and pepper
  • Sugar

My grandmother already knew this rustic dish

Wash the potatoes, cook them with their skins on in salted water, rinse well, and set aside. Heat the butter in a saucepan, add the bacon and diced onion, and sauté. Stir in the flour and brown, stirring constantly. Gradually add the meat broth. Let everything simmer for about ten minutes. In the meantime, peel and slice the potatoes. Add the wine to the sauce and season generously with vinegar, salt, pepper, and sugar. Heat the potato slices in the sauce and let them marinate. Serve with sausages, boiled beef, or meatballs, and a green salad.
