Spaghetti salad à la Schaeffi

Ingredients for 2 servings:

  • 250g spaghetti
  • 400 g turkey breast, cooked
  • 100 g Emmental cheese
  • 2 bell peppers
  • 2 bunch radishes
  • 4 tomatoes
  • 2 eggs, hard boiled
  • 4 tbsp crème fraîche
  • 1 cup of low-fat yogurt (small cup, approx. 150 g)
  • 3 tbsp tomato ketchup
  • 1 dashes Tabasco
  • 1 tbsp wine vinegar
  • Salt
  • Paprika powder, sweet
  • Chive rolls

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Break the spaghetti into 1-2 pieces, add it to boiling salted water, cook for 10-12 minutes, and rinse it with cold water in a sieve. Cut the turkey breast into even-thick strips and the cheese into thin sticks. Halve the bell peppers, rinse, dry, and slice them. Wash, dry, and slice the radishes. Wash, dry, and cut the tomatoes into eighths. Peel and slice the eggs. Mix everything loosely in a bowl. Mix the crème fraîche, yogurt, tomato ketchup, Tabasco, vinegar, salt, and paprika well and dress the salad with it. Finally, sprinkle the chives over the salad.
