Spaghetti with Vegetables

The perfect spaghetti with vegetables recipe with a picture and simple step-by-step instructions.

Spices

  • Freshly cooked parsnips
  • Freshly cooked cauliflower
  • Freshly cooked kohlrabi
  • Steamed carrots
  • Paprika (red and green)
  • Tomatoes
  • Salça (Turkish tomato paste)
  • Lime oil
  • Sour cream
  • Crushed red pepper
  • Oregano (wild marjoram) spice
  • Garlic
  • Black salt
  • Freshly grated nutmeg

  1. In a large saucepan, garlic is sautéed with lime oil. Put on the pasta water with plenty of salt.
  2. Now add the garlic one after the other – the vegetables – then the spices and then add the tomatoes (cut into cubes) and the tomato paste. Stir well and then add a little pasta water. Let it boil down for 10 minutes. Put the pasta in the water (I like to add a touch of nutmeg) and cook.
  3. Drain the pasta and place on plates immediately. Stir the vegetable mixture well again and pour over the pasta. Sprinkle black salt – enjoy! If you like, you can add some cheese on top.
