Spaghetti with Vegetables
The perfect spaghetti with vegetables recipe with a picture and simple step-by-step instructions.
Spices
- Freshly cooked parsnips
- Freshly cooked cauliflower
- Freshly cooked kohlrabi
- Steamed carrots
- Paprika (red and green)
- Tomatoes
- Salça (Turkish tomato paste)
- Lime oil
- Sour cream
- Crushed red pepper
- Oregano (wild marjoram) spice
- Garlic
- Black salt
- Freshly grated nutmeg

- In a large saucepan, garlic is sautéed with lime oil. Put on the pasta water with plenty of salt.
- Now add the garlic one after the other – the vegetables – then the spices and then add the tomatoes (cut into cubes) and the tomato paste. Stir well and then add a little pasta water. Let it boil down for 10 minutes. Put the pasta in the water (I like to add a touch of nutmeg) and cook.
- Drain the pasta and place on plates immediately. Stir the vegetable mixture well again and pour over the pasta. Sprinkle black salt – enjoy! If you like, you can add some cheese on top.
