Spaghetti with wild garlic and feta cheese sauce

Ingredients for 4 servings:

  • 75 g wild garlic
  • 250 g tomatoes (dates)
  • 1 pack of feta cheese
  • 1 large onion(s)
  • 2 garlic cloves
  • 200 ml cream
  • vegetable broth
  • salt and pepper
  • Herbs
  • 100 g cooked ham or cooked turkey breast fillet, can also be omitted
  • possibly milk
  • 500g spaghetti

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Dice the onion and ham. Finely chop the garlic. Halve the tomatoes. Dice the feta. Finely chop the wild garlic stalks and cut the wild garlic leaves into strips. Cook the spaghetti in salted water according to the package instructions. Fry the diced onion in a little olive oil, add the garlic, do not let it brown. Add the wild garlic stalks. Brown the cooked ham/turkey. Add the diced feta, let it melt briefly, and deglaze with the cream. Mix the feta well. Season with vegetable stock, salt, and pepper, and add herbs to taste. Add the tomatoes, simmer for 3 minutes, thinning with a little milk if desired. Stir in the wild garlic leaves and remove from the heat. Serve with the spaghetti.
