Spanish-style rice dish

Ingredients for 4 servings:

  • 3 bell peppers, colored
  • 1 small onion(s)
  • ½ bunch parsley, chopped
  • 250 g bratwurst (grilled sausages), small
  • 2 tbsp oil
  • 300 g rice
  • 900 ml vegetable stock
  • 1 tsp curry powder
  • 100 g peas (can)
  • salt and pepper

quick and tasty

Halve the bell peppers, trim and cut into thin strips. Peel and finely dice the onion. Cut the sausages into slices about 1 cm thick. Heat the oil in a large pan and fry the sausage pieces until crispy, then remove. Sauté the diced onion and pepper strips in the remaining fat for about 2-3 minutes. Add the rice and sauté briefly until translucent. Pour in the vegetable stock and curry powder. Simmer over low heat for about 15 minutes, stirring occasionally, until the rice is al dente. About 2 minutes before the end of the cooking time, stir in the peas. Finally, add the sausage pieces and season everything with salt and pepper. Sprinkle with parsley and serve.
