Ingredients for 4 servings:
- 1 m.-sized vegetable onion(s)
- 1 kg potatoes, waxy
- salt and pepper
- 70 ml olive oil
- 5 eggs
- 150 g sausage (slightly firmer chorizo, Spanish paprika sausage)
Instructions

Peel and dice the onion very finely. Wash and peel the potatoes, and cut into small cubes or thin slices. Heat the olive oil in a non-stick pan over medium heat and fry the potato and onion mixture, stirring frequently, until light brown to golden yellow, about 12 to 15 minutes. The potatoes should not become crispy. Tear the sausage into pieces and add it to the pan. Whisk the eggs in a bowl, seasoning with salt and pepper. Add them to the pan and toss to coat. Let it set over low to medium heat for about 3-4 minutes, then place in the preheated oven at 180°C for another 3-4 minutes. As soon as the egg appears translucent, turn it over and let it set on the other side. If the color is still a bit pale, fry a little longer on each side. Place the finished tortilla on a plate and serve immediately. Tip: Various ready-made tapas, such as bacon-wrapped dates, go well with this.
