Spare ribs in spicy honey chili sauce

Ingredients for 2 servings:

  • 1 kg spare ribs
  • 2 onions
  • 4 tbsp sugar, brown
  • 400 ml tomato ketchup
  • 4 tbsp vinegar (herb vinegar)
  • 2 tbsp Worcestershire sauce
  • salt and pepper
  • chili flakes
  • vegetable oil

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Finely chop the onions and cook in a pan with vegetable oil until translucent. Add the brown sugar and caramelize, stirring constantly. Add tomato ketchup, herb vinegar, and Worcestershire sauce and bring to a boil. Season with salt, pepper, and chili flakes. Cut the spare ribs into portions and place them in the still-simmering sauce. Simmer for 30 to 45 minutes. When the bone falls away from the meat, the spare ribs are done. Remove from the heat, let them cool in the sauce, and refrigerate the pan for 12 hours. Then grill the spare ribs over charcoal for about 10 minutes on each side. Serve with jacket potatoes with sour cream and baguette.
