Speculation Soufflé
The perfect speculation soufflé recipe with a picture and simple step-by-step instructions.
- 30 g Spekulatius
- 3 Eggs
- 3 tbsp Milk
- 10 g Food starch
- 10 g Flour
- 50 g Sugar
- 50 g Ground cinnamon
- 1 Pr Salt
- Butter and sugar for the molds

- Preheat the oven to 180 ° C
- Separate the eggs, beat the egg whites with sugar until stiff
- Mix the egg yolk, milk, starch, flour, cinnamon, salt and speculoos together. Carefully fold in the beaten egg white and fill into 4 buttered molds sprinkled with sugar.
- Line an ovenproof baking dish with kitchen paper and place the molds on it. Pour water up to 1/3 under the rim of the molds and bake the soufflé in the oven for approx. 15 minutes.
- I served my red wine plums and a dollop of cream with it.
