Ingredients for 4 servings:
- 4 egg yolks
- 80 g sugar
- 1 tbsp vanilla sugar
- 100 ml apple juice
- 200 g speculatius, almond
- 400 ml cream
- 1 pinch of cinnamon

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes
Whisk the egg yolks, sugar, cinnamon, vanilla sugar, and apple juice in a metal bowl over a hot water bath until creamy, then whisk in a cold water bath until cool. Crumble the speculat biscuits and fold in. Whip the cream until stiff peaks form and fold in. Pour the mixture into a loaf pan (e.g., a king cake pan), smooth the surface, and freeze for at least 12 hours. Before serving, briefly dip the pan in hot water, turn out the parfait, and slice it. Garnish with chocolate shavings and serve!
