Ingredients for 2 servings:

  • 1 egg yolk
  • 25 g sugar, brown sugar if desired
  • ¼ tsp vanilla pulp
  • 25 ml apple juice
  • 40 g speculatius biscuits
  • 100 g cream
  • 20 g chocolate shavings, brown or white, for garnishing

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Caution! The parfait needs to chill overnight, so prepare it the day before. Chill the molds. Mix the sugar, egg yolks, vanilla pulp, and apple juice in a bowl and beat in a warm water bath until the mixture is light yellow and creamy. Then beat again in a cold water bath until it has cooled. Crumble the speculat biscuits and fold in. Whip the cream until stiff and fold in as well. Pour the mixture into molds (a piping bag is helpful for tall molds) and refrigerate overnight. Briefly dip the molds in hot water and turn the parfait out. Then garnish with the chocolate (or something else you like better).
