Ingredients

  • 700 g Spelt flour type 630
  • 50 g Chickpea flour
  • 50 g Red lentil flour
  • 150 g Yogurt
  • 350 ml Warm water
  • 1 tsp Salt
  • 1 tbsp Honey liquid
  • 1 packet Dry yeast

Instructions

  • Mix all dry ingredients well, pour the yoghurt, honey and water into a well and work everything with a food processor or with your hands to a nice, smooth dough. Cover and let rise in a warm place for 90 minutes.
  • After 90 minutes, turn the dough out of the bowl and knead again, flatten it slightly, fold it in on the right and left and finally fold it in at the top and bottom to make a roll. Now place the roll in a baking pan lined with baking paper (if possible with a lid) with the wrapping side down. Cut into the top as you like, spray with water and cover and let rise for another 60 minutes.
  • After this time, place the bread in the cold oven and bake at 180 ° C top / bottom heat with the lid closed for 50 minutes, then remove the bread from the pan and bake for another 10 minutes. (Depending on the degree of browning, cover the oven with baking paper if necessary) After the baking time, let the bread cool down on a rack. Good Appetite
  • You can use any other flour instead of chickpeas and red lentil flour, for example. Rye flour, etc.
