Spelled Pancakes with Caramel Apples

Ingredients
 

  • 1 large Sour apple
  • 1 tbsp Butter
  • 1 tbsp Sugar fine
  • 1 packet Burbon vanilla sugar
  • 1 packet Apple juice
  • 3 Eggs
  • 1 pinch Salt
  • 150 g Wholemeal spelt flour
  • 1 tsp Baking powder
  • 200 ml Milk
  • Ground cinnamon
  • Powdered sugar
  • Possibly calvados

Instructions
 

  • Peel the apple, remove the core and cut into wedges. In a pan, heat the butter with sugar and 1/2 packet of burbon vanilla sugar while stirring until the mixture is light brown and smells slightly like caramel. Now quickly remove the pot from the hob and add the apples, stir and put the pot back on the hob. Deglaze with the apple juice and steam the apples softly to taste. If no children are eating, calvados can still be used. Let cool down!
  • In the meantime, put the eggs in a mixing bowl with a pinch of salt and the rest of the burbon vanilla sugar, and beat. Mix in the wholemeal spelled flour and baking powder. Gradually stir in the milk. It is best to let the dough swell a little.
  • Heat the butter in a pan, add the dough and let it set over a mild heat. Divide with 2 forks (if the pan is coated with 2 wooden or plastic spatulas), sprinkle with approx. 2 teaspoons of sugar and brown the pancakes while turning several times.
  • Arrange the pancakes on 2 plates and sprinkle with cinnamon and powdered sugar. Add the caramel apples and distribute the juice over the apples. Tastes very good when the juice soaks in the Schmarren!
