Spelled Tagliatelle

The perfect spelled tagliatelle recipe with a picture and simple step-by-step instructions.

  • 400 g Spelled flour type 630
  • 4 Eggs (L)
  • 50 ml Water
  • 2 tsp Salt
  • 2 tsp Extra salt
  1. Knead the flour, eggs, water and salt well! Possibly add a little more flour or water if the dough is too soft or too dry! 🙂 With a little flour, make a ball shape and let it rest for a while!
  2. In the meantime, assemble the pasta machine and prepare salted water in a large saucepan!
  3. Divide the dough into small portions and gradually turn the pasta machine! The thickness / thinness depending on your taste. Then flour the pasta plates and set aside! Then turn through the tagliatelle machine or cut by hand or with the pizza roller! 🙂 Flour the pasta again and spread it over the work surface!
  4. The noodles were not completely cooked! So you can finish cooking them again briefly in salt water or toss them in nut butter! 🙂 If you want to eat them straight away, cook for about 5 minutes instead of 3 minutes!
